Raspberry Cherry Vanilla Coconut Smoothie

Raspberry and cherry give coconut milk a bright, tart fruit pairing. Vanilla rounds out the flavor, and spinach adds leaves. Optional coconut flakes supply another texture, but the drink works without a topping when you prefer a simpler finished smoothie.

Ingredients

  • 0.5 cup spinach
  • 1 cup unsweetened coconut beverage
  • 1 cup frozen raspberries
  • 0.5 cup cherries frozen, checked for pits
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon raw coconut flakes optional

Directions

  1. Put the measured liquid in the blender with the prepared leafy greens. Secure the lid and process until the leaves are finely dispersed, stopping the machine before scraping down the sides if needed.
  2. Add the remaining edible ingredients, including the measured fruit, nuts, seeds, or spices listed for this recipe. Blend until evenly combined. Use the machine instructions to choose a suitable speed, and stop before checking texture or scraping the jug.
  3. Taste a small spoonful after blending. If the mixture is too thick to pour, add cold water one tablespoon at a time and blend briefly again. Divide the base batch into 1 serving and enjoy promptly.

Notes

Prepared ingredients are required; additional cooking, cooling, freezing, brewing, or soaking time is excluded from the active prep estimate. Serving volume and nutrition totals are not measured.

Tips and ingredient notes

Use plain coconut beverage and unsweetened fruit. Raspberry seeds may stay noticeable in a less powerful blender. Judge the blended texture before adding coconut flakes so you can decide whether another chewy element is desirable.

Raspberry seeds remain noticeable in many household blenders. A longer blend may reduce that texture, but will not make every seed disappear. Use smaller frozen portions and follow the machine instructions rather than running a struggling motor continuously.

Inspect cherries for pits and fragments even when the package says pitted. Sweet and tart varieties have noticeably different flavors. Use the variety specified where possible, and record substitutions before deciding whether the drink needs a different balance next time.

Ingredient health benefits

  • Spinach provides vitamin K, needed for normal blood clotting.
  • Berries add dietary fiber, which supports normal bowel function.
