Carrot Strawberry Pineapple Coconut Water Smoothie

Carrot adds a mellow vegetable note to strawberry and pineapple in this spinach smoothie. Coconut water supplies a light base. The berry-and-tropical pairing gives a brighter result than carrot blended only with banana or a milk ingredient.

Ingredients

  • 1 cup spinach
  • 1 cup coconut water
  • 0.5 cup carrots
  • 0.5 cup frozen strawberries
  • 0.5 cup frozen pineapple chunks

Directions

  1. Put the measured liquid in the blender with the prepared leafy greens. Secure the lid and process until the leaves are finely dispersed, stopping the machine before scraping down the sides if needed.
  2. Add the remaining edible ingredients, including the measured fruit, nuts, seeds, or spices listed for this recipe. Blend until evenly combined. Use the machine instructions to choose a suitable speed, and stop before checking texture or scraping the jug.
  3. Taste a small spoonful after blending. If the mixture is too thick to pour, add cold water one tablespoon at a time and blend briefly again. Divide the base batch into 1 serving and enjoy promptly.

Notes

Tips and ingredient notes

Wash and grate or finely chop fresh carrot. Prepare packaged frozen carrot according to its instructions and cool first if substituting. Measure both fruits so neither completely hides the carrot flavor in the blend.

Wash fresh strawberries before removing their tops, then measure the usable fruit. Plain frozen strawberries are convenient when fresh fruit is inconsistent. Avoid sweetened dessert berries, which change the balance and make it harder to compare one batch with another.

Remove tough pineapple peel and the firmest core before measuring fresh flesh. For frozen fruit, separate the chunks so they reach the blades evenly. A fibrous pineapple can leave texture even after the softer ingredients have become smooth.

Ingredient health benefits

  • Carrot contributes carotenoids that the body can convert into vitamin A.
  • Spinach contributes magnesium, involved in normal muscle and nerve function.
